There’s something about holidays that make me really miss my mom. It’s the little things, really, like the fact that, on Easter, she’d always have a little sweet treat waiting for me in the morning, even after I stopped believing in the Bunny. As I’ve gotten older, and therefore closer to motherhood myself, I really appreciate her showing me her love through candy and food. I made Michael and Emilio an Easter basket this year, full of all the drugstore candy I don’t really eat, but that they love. It got me really excited to fill baskets for my own children, full of homemade sweets and vegan candy; I’ll definitely be using some of the recipes below. For myself, I’ll stick with a more grown-up flavor palette, like my Dark Chocolate-Covered Matzoh with Ginger, Fennel and Figs. It’s a super easy recipe, with big rewards; try for yourself!

Dark Chocolate-Covered Matzoh Bark:

2 tbsp fennel seeds
1 tbsp brown sugar

~ 1/4 lb dark chocolate
~ 1 cup chopped calimyrna figs
~ 1/2 cup chopped crystallized, candied ginger
sprinkle sea salt
3 6×6 sheets matzoh

Toast fennel seeds over medium heat for 2 minutes, until fragrant. Add brown sugar, and stir constantly until sugar melts and coats the seeds. Remove from heat, breaking up any large chunks, and set aside. Over a double boiler or in a microwave (20 second increments), melt the dark chocolate; start with less, you can always melt more. Once melted, use a pastry brush to “paint” the chocolate over the surface of the matzo. Then sprinkle fennel, figs, and ginger over top. Let cool, then break matzo into pieces. This recipe doubles and triples well. Enjoy!
